
Description
This cold pressed extra virgin olive oil is made from a blend of organic valuable local varieties: Coratina, Ogliarola Barese and Leccino. The olive groves are located in Minervino Murge (BT), at the gateway to the Alta Murgia National Park. Cultivated on historical land, the average age of the trees is 60-70 years.
It has a more delicate flavour than Allegro.
Organoleptic characteristics of Andante Organic Olive Oil
An oil with low acidity - between 0.17 and 0.20, lower than the legal limit (0.8) that classifies an oil as extra virgin.
TASTE PROFILE: medium fruitiness, moderate bitterness and spiciness.
Olive grove characteristics
Growing area: all the olive groves are located at the entrance to the Alta Murgia National Park.
Certified organic olive groves: manure, compost and other substances permitted in organic farming are used to nourish the trees. No chemical fertilisers or synthetic pesticides are used.
Olive processing in a very short time
The olives are harvested when they are ripe. In order to maintain the high quality of the oil obtained, the olives are pressed the same day as they are harvested, using only cold mechanical processes (< 27°C).
Storage prior to bottling: in stainless steel containers in suitable rooms, also at controlled temperatures between 14°C and 16°C. Conservation under nitrogen to maintain the high quality of the oil over time.
