  • Location: Internal hills, at an altitude of 300 meters
  • Soil type: Clayey, ideal for olive trees
  • Traditional planting: Trees spaced 10-12 meters apart, allowing for optimal nutrient uptake, growth, and biodiversity preservation

Olive processing:

  • Prompt processing: Olives are harvested at the perfect ripeness and promptly transported to the mill to preserve their integrity
  • Manual harvesting: Ensures gentle handling and minimizes damage
  • Aeration: Olives are stored in ventilated crates to prevent spoilage
  • Stainless steel storage: Maintains oil quality in suitable conditions, with controlled temperatures between 14°C and 16°C

Pairings :

Our Caletra extra virgin olive oil is ideal on simple or tomato bruschetta, on legume-based dishes (chickpeas and lentils) or velvety soups (pumpkin).

Excellent on stewed seasonal vegetables or salads with porcini mushrooms.

Meat . To be enjoyed on all grilled meats, in particular Florentine steak and grilled pork, game and carpaccio. But also grilled tuna and swordfish.

Storage : to maintain the quality of our oil over time, keep away from light and heat sources (ideal storage temperature is 14-18 °C).
