Organic Thistle Honey by Luigi Manias is one of the great Sardinian honeys of excellence with an intense and strong flavour , which tends to inebriate even the most difficult palates .
It recalls the flowers of the Mediterranean countryside and is unique in the panorama of Italian honeys.
The foraging bees collect the nectar of the thistle, a wild plant used to living in the arid climate of Sardinia and blooming in spring with beautiful red-purple flowers.
- Color : light amber with delicate greenish reflections when liquid, from light beige to dark beige, with yellow tones, when crystallized.
- Consistency: crystallizes spontaneously with irregular crystals.
- Aroma: strong, vaguely spicy, reminiscent of cinnamon with a light presence of nutmeg and wild thistle flowers. It demonstrates a very sweet floral component reminiscent of red fruit jams and a stronger and more subtle one, like freshly tanned leather.
- Taste: sweet and strong, at the end it gives a surprising slightly bitter aftertaste.
COLLECTION AREA . Collected exclusively from spontaneous flora in an absolutely uncontaminated area: Monte Arci Park - Ales countryside. It is a park of inestimable naturalistic value, here you can find much of the typical Sardinian vegetation.

Instructions
Thistle honey is a honey that is especially good with cheeses due to its great personality.
Cheeses : prefers combinations with medium-aged cheeses (e.g. pecorino) or with spicy cheeses.
Due to its intense but well-balanced flavour, thistle honey is delicious spread on a slice of bread and also with meat , while it is not suitable for sweetening drinks.
Possibly combined with rather acidic yoghurts .
Storage : store in a cool, dry place, away from heat sources.
Notes : honey can be taken by children from the age of 1 year.
