
Description
The excellence of Italian's organic extra virgin olive oil, obtained exclusively from the prized Coratina variety. The olive groves are located in Minervino Murge (BT), at the gateway to the Alta Murgia National Park. Historical olive groves with an average age of 60-70 years.
Organoleptic characteristics of Allegro Organic Coratina Olive Oil
An oil with low acidity - between 0.17 and 0.20, lower than the legal limit (0.8), which classifies an oil as extra virgin.
TASTE PROFILE: intensely fruity, with aromas of freshly cut grass, almond, tomato and artichoke, with notes of bitterness and spiciness on the palate.
Olive Grove Characteristics
Location of the olive groves: all the olive groves are located at the entrance to the Alta Murgia National Park.
Certified organic olive groves: manure, compost and other substances permitted in organic farming are used to nourish the trees. No chemical fertilisers or synthetic pesticides are used.
Olive processing in a very short time
The olives are harvested when they are ripe. In order to maintain the high quality of the oil obtained, the olives are pressed the same day as they are harvested, using only cold mechanical processes (< 27°C).
Storage prior to bottling: in stainless steel containers in suitable rooms, also at controlled temperatures between 14°C and 16°C. Conservation under nitrogen to maintain the high quality of the oil over time.
