    As one of the heritage varieties of the Grenoble walnut, the Franquette is late-ripening, characterized by a slightly elongated shape and a thick shell. Unlike the American Chandler and Hartley varieties—predominant in intensive farming—the Franquette boasts a lighter kernel, a subtler flavor, and a more complex aromatic profile. This slower maturation enhances the development of the nut's natural oils.

    Walnuts in their shells are best kept in a cool, dry place, away from direct sunlight. During warmer months, when temperatures exceed 25°C, it is preferable to store them in the refrigerator to preserve their freshness and quality for longer.

    For proper fridge storage:

    • Transfer the walnuts into an airtight glass container.
    • Seal the container tightly to prevent them from absorbing odors from other foods.
    • Place them on the less cold shelves or inside the vegetable crisper drawer.

    AOP (Appellation d'Origine Protégée) is the European designation guaranteeing that a product is grown, processed, and packaged within a specific geographical area—in this case, the Dauphiné region of France. It is the French equivalent of the Italian DOP (Protected Designation of Origin). The Grenoble AOP walnut is one of the few recognized European denominations of origin for dried fruit and nuts.

    The natural color of walnut shells ranges from beige to light brown. The uniform white appearance seen in many mass-market products is the result of chemical bleaching agents. Our walnuts do not undergo this process; the shells retain their natural color, which may vary from nut to nut.

    The unsaturated fatty acids in our walnuts are heat-sensitive, meaning prolonged cooking or heavy roasting can alter their nutritional profile. To get the most out of them, we recommend enjoying them raw in salads, paired with cheeses, added to breakfasts, or simply tossed into hot dishes right at the end of cooking.
