Our beekeeper Giuseppe Masciulli collects his organic clover honey in the countryside of Matera , in the summer, places rich in flora and where the climate is very mild.
It is an ideal area for this grass as it requires lots of sun and soft soil. The clover in the flowering stage sports brilliant deep pink and purple-red flowers.
This organic clover honey is a rather rare monofloral honey. It has a beautiful intense yellow color and tends to crystallize in a regular, very fine manner. It is a fresh honey, delicate and of medium sweetness but with a good persistence, also suitable for accompanying fresh and blue cheeses.
Its delicate aroma is reminiscent of milk sweets.
Alveus clover honey is produced using organic beekeeping methods, not pasteurized . It is raw honey that has not undergone any heat treatment.
