This is an entirely artisanal process—defined by careful attention, precise timing, and manual intervention—which enhances the product without altering its natural properties. The result is a unique honey: naturally rich and structured, yet soft and pleasant to the palate.
Production Method
The frames are collected every 3–4 days to stay ahead of the natural crystallisation process. The honey is processed immediately after the harvest, with manual extraction from the honeycomb followed by controlled dehumidification.
It is never pasteurised or subjected to heat treatments, thus preserving all its natural enzymes, aromas, and nutritional properties.
What is Ivy Honey?
Ivy honey is derived from the blossoms of common ivy (Hedera helix), which flowers between September and November. It is one of the rarest honeys in the world because its crystallisation is extremely rapid, making both harvesting and processing exceptionally difficult. Furthermore, production is heavily dependent on specific weather conditions; for this reason, it is not available every season.
