Description
This honeydew is harvested within the Veio Natural Park in Lazio, Italy. Spanning 15,600 hectares, the park is home to 730 plant species, including some that are rare, relict or of significant ecological and biogeographical interest.
Our beekeeper, Ignazio Pizzoni, has his apiaries within the park. The area is a true paradise for bees thanks to its lush, vast forest of chestnut trees, oaks and elms.
Characteristics:
Colour: Dark, with reddish hues.
Crystallisation: Generally absent.
Aroma: Vegetal, with notes of malt and caramelised sugar; highly aromatic.
Flavour: Moderately sweet, with notes of malt, molasses and baked apple.
To enjoy the best possible tasting experience, it is recommended that you try the honeydew on its own, with your eyes closed and your nose open.
Production method:
This artisanal product is created using organic beekeeping methods and no chemical treatments.
The honey is not subjected to heat treatment, which preserves its high nutritional value.
