Description
Organic rosemary honey harvested on the rocky coast of the beautiful island of Capraia. A very rare monofloral honey that can only be produced in purity in certain years.
Characteristics:
Aroma: delicately aromatic, slightly floral, salty.
Flavour: fine aromatic, floral, bitter almond, slightly citrus.
Physical state: generally crystallises quickly with fine crystals and is therefore very soft. Its colour is ivory-white with light straw-yellow reflections.
Harvest area: Island of Capraia
The rocky cliffs, exposed to the wind and the sun, are covered with bushes of wild rosemary which, when in bloom, glow with tiny blue-violet flowers. Their intense scent mixes with the sea breeze to create an atmosphere of purity and unspoilt nature.
This exceptional microclimate not only makes the landscape a natural work of art, but is also a precious gift to the local bees, who collect the nectar to produce the highest quality organic honey. Every teaspoon of this honey contains the taste of the sea, the warmth of the sun and the scent of Mediterranean herbs, offering an authentic expression of the Capraia area.
