Description

An intense, lively and warm chocolate that owes its exceptional persistence on the palate to a blend of 7 spices (vanilla, cinnamon, cardamom, ginger, star anise, cloves and Espelette chilli), specially designed and dosed to come as close as possible to the authentic chocolate flavour.

Organic cocoa from ancient (non-hybrid) varieties

Only cocoa beans of the 'Nacional' variety from Ecuador, with organoleptic characteristics very similar to Criollo, the most prized cocoa variety, are used in the production of this bar. The beans are purchased directly from a cooperative in Ecuador with the SPP Fair Trade label.

Artisanal product

77% cacao dark chocolate bar produced in Burgundy (France) in the artisan workshop founded in 2007, one of the first organic cacao raw chocolate workshops in France.

The raw cocoa nibs are ground very finely in a stone mill for 3 days. This process, without roasting or cooking, preserves all the aromatic and nutritional virtues of raw cocoa.

Ingredients you will NOT find in our raw chocolate:

  • untraceable cocoa blends and cocoa butter,
  • added refined sugar (white, cane or other),
  • artificial sweeteners
  • Lecithins and added fats,
  • natural or synthetic vanilla (vanillin)

Why we chose this raw organic chocolate

  • Bean to bar: the true artisanal production process, from the transformation of the beans into cocoa paste, and from the cocoa paste to the finished bar.
  • Unroasted chocolate: the beans are raw (not roasted) and cold processed. This process preserves all the nutrients that are usually largely destroyed by roasting. Raw chocolate contains 4 times more antioxidants than roasted chocolate.
  • Documented sustainable production: a commitment to fair trade that actively contributes to a dignified life for the farmers of the Ecuadorian cooperative. Thanks to this commitment, the cocoa has been awarded the "Symbols des Producteurs Paysans" (SPP) label.

Slow tasting

Ideally, it should be enjoyed in very small quantities so as not to saturate the palate.
Let it melt gently under your tongue or between your tongue and palate. The flavours will reveal themselves one by one.
Then let it move to other parts of your mouth, where you will discover even more flavours.

Storage: in a cool, dry place. The ideal storage temperature is between 16°C and 22°C.
