Description

This organic thyme honey is one of the rarest Sicilian honeys. It is harvested in the area of the San Pietro forest nature reserve , about 20 km from Caltagirone.

It is the second nature reserve in all of Sicily and borders the Sughereta di Niscemi (a large oak forest) and together they form one of the most lush and green areas of Calatino.

Here the vegetation is extremely varied thanks to the many water sources. The forest of the reserve is home to more than 300 plant species, some very rare. Walking in the woods you will find hawthorn, heather, strawberry tree, myrtle, rosemary and the precious thyme.

This organic thyme honey , already considered the most precious honey in ancient times, has a light amber colour . Its scent is spicy, reminiscent of aromatic herbs, Marsala and mulled wine. The flavor is particular, with hints of aromatic herbs and dates. It has a non-aggressive but nonetheless very effective sweetness.

It can have the classic whitish marbling . This aspect occurs very frequently in honey NOT subjected to any heat treatment and stored in a cool place. While this may appear to be an aesthetic defect, it is a sign of further assurance of the quality of the product.

As a sweetener : it is an excellent thirst quencher and therefore ideal for sweetening drinks. Try it with water and lemon
