Description
A honey harvested in the heart of the Pyrenees, in the Pays de Sault, at an altitude of over 1000 metres. Our beekeeper Jerome's bees collect nectar from lime trees, raspberries, rhododendrons, blackberry blossoms and a little fir honeydew.
A very fragrant honey, with a full and rich flavour, without being too strong, with a hint of menthol from the lime blossom.
Its colour is dark amber, due to the honeydew notes, and it tends to be crystallised with fine crystals.
Characteristics:
Aroma: very fragrant, with notes of alpine herbs.
Flavour: intense, round, with menthol notes.
Physical state: tends to crystallise quickly with fine crystals, making it very soft. Its colour is dark amber with light straw-yellow reflections.
It is a raw mountain honey produced according to organic beekeeping methods. It is not pasteurised, cold extracted by centrifugation and has not undergone any heat treatment.
