
Description
A chestnut honey unique for its aroma and flavour, harvested in the Val di Vara, an area between Liguria and Tuscany. The intense and bitter "typical" flavour of the chestnut is softened by the presence of myrtle, sweet clover, thyme and blackberry.
The places where Luca Bonizzoni's apiaries are set up in July for the production of this precious honey are splendid and unspoilt: the Val di Vara, where nature shines in all its splendour, made up of vast meadows, woods, springs and abundant watercourses.
An area that has preserved its wild nature and is famous for its bio-district, where farmers, citizens, tourist operators, associations and public administrations have reached an agreement for the sustainable management of resources, based on the organic model of production and consumption.
And then it takes all the wisdom of beekeeper Luca Bonizzoni to create a chestnut honey so rich in nuances of flavour that vary from year to year, because it is still an artisanal product.
An unpasteurised honey that preserves all its nutritional properties.
Organoleptic characteristics:
Physical state: slow crystallisation after a few months. Colour: dark amber. Flavour : intense, bitter, round. It reminds of cocoa.
