Our Olive Groves: A Tapestry of Tradition and Harmony
Location: Our olive groves grace the inland hills, perched at an altitude of 300 meters. Nestled amidst clay-rich soils, these lands provide an ideal haven for our olive trees to thrive.
Traditional Cultivation: Embracing time-honored practices, we maintain a distance of 10-12 meters between our olive trees. This harmonious spacing allows them to flourish, nourished by the earth's bounty, while preserving the landscape's biodiversity. In stark contrast, intensive and super-intensive olive cultivation methods often reduce spacing to 3 and 1.5 meters, respectively, compromising the trees' well-being and the ecosystem's balance.

Our olive groves are a testament to the enduring legacy of Tuscan olive cultivation. At their heart lie 180 centenarian olive trees, their gnarled branches whispering tales of generations past. These venerable sentinels are complemented by younger olive groves that first yielded their precious fruits in 2015.

Storage before Bottling: Prior to bottling, the olives rest in stainless steel containers within temperature-controlled environments, maintained between 14°C and 16°C.
Nitrogen Preservation: To safeguard the oil's exceptional quality over time, we employ nitrogen preservation techniques.
