Indigo honey has a light yellow color , with slight pinkish reflections, tending towards white. It crystallizes finely, until it becomes a soft cream.
It has a delicate, fresh and fragrant flavour , of medium sweetness with unexpected fruit accents. Its citrus aftertaste is reminiscent of fruit jellies, which is why children like it a lot and is very suitable for sweetening fruit salads and infusions.
This indigo honey is collected in the Po' Valley, between the spring and summer seasons , after the acacia has flowered.
In this area the plant grows luxuriantly, with its characteristic spikes of dark purple flowers from which long stamens emerge loaded with bright yellow-orange pollen. From their nectar, bees produce this rare and precious honey.
This indigo honey is raw and is produced according to organic beekeeping methods. It is not pasteurized, extracted by cold centrifugation and has not undergone any heat treatment.
