The Challenge of Harvesting:

Ivy honey has an extremely delicate nature. It crystallizes almost instantaneously, making its extraction a complex and laborious process. To preserve its precious qualities, ancient extraction techniques are used:

Direct extraction from the comb: The honey is extracted manually, gently separating it from the combs, just as it was done in the past.
Rapid extraction: The partially filled honey frames are removed every 3-4 days and extracted with the utmost speed.
Immediate dehumidification: The honey is dehumidified before the rapid crystallization begins.

excellent and unusual, it looks more like propolis than honey, also due to its consistency. Sublime taste, I ordered another 10 jars, too bad they are only 250gr cuts, however I don't want to be without it, it is a honey to sip, to be used not as a sweetener but in small doses in moments of mental and physical fatigue.
