Description

Thistle honey is one of the great honeys of Sardinia with an unmistakable taste and aroma that make it unique among the many Italian honeys. Production 2020.

The foraging bees collect the nectar of the thistle , a wild plant used to living in the arid climate of Sardinia and blooming in summer with beautiful red-purple flowers.

With a strong and characteristic flavour , the organic thistle honey produced by Terrantiga beekeepers has an intense aroma reminiscent of the flowers of the Mediterranean countryside rich in very sweet aromas.

Color : light amber with delicate greenish reflections when liquid, from light beige to dark beige, with yellow tones, when crystallized.
Consistency : crystallizes spontaneously with irregular crystals.
Aroma : strong, vaguely spicy , reminiscent of cinnamon with a slight presence of nutmeg and wild thistle flowers. It demonstrates a very sweet floral component reminiscent of red fruit jams and a stronger and more subtle one, like freshly tanned leather.
Taste : sweet and strong, at the end it gives a surprising slightly bitter aftertaste.

In the throat it releases all its character with a strong and characteristic bouquet and releases a very sweet and persistent flavour.

Instructions

Thistle honey is a honey that is especially good with cheeses due to its great personality.

Cheeses : It prefers combinations with medium-aged cheeses (e.g. pecorino) or with spicy cheeses.

Due to its intense but well-balanced flavour, thistle honey is delicious spread on a slice of bread and also with meat, while it is not suitable for sweetening drinks.

Possibly combined with rather acidic yoghurts.

Notes : honey can be taken by children from the age of 1 year.

Storage : store in a cool, dry place, away from heat sources.
