Nestled among the sunny hills and unspoilt valleys of central Sardinia, between the small villages of Bauladu, Fordongianus and Paulilatino, lies one of the island's most iconic honeys: Thistle Honey. In this harsh yet generous landscape, where the air smells of Mediterranean scrub, bees collect nectar from wild thistles that bloom in summer, colouring the landscape red and purple.

The result is a honey with a strong, authentic character that encapsulates the true soul of Sardinia. Our beekeeper, Daniele Cossu, produces it according to organic and artisanal principles, without chemical treatments or heat, to preserve its flavours, aromas and nutritional properties.

Characteristics:

Colour: Light amber with greenish reflections when liquid, and beige with yellow tones when crystallised.

Consistency: it crystallises naturally, forming irregular crystals.

Aroma: intense and enveloping with a floral-fruity scent reminiscent of yellow daisies, cut bark and wild thistle flowers.

Taste: strong and sweet with a surprising, lingering aftertaste offering aromatic complexity and caramelised notes.

On the palate, it releases the full strength of the Sardinian landscape, offering a unique bouquet that captivates the senses.

Harvest area: Sardinia – the hills and plateaus between Bauladu, Fordongianus and Paulilatino.

Production method: artisanal and organic, with no heat or chemical treatments, therefore retaining its great nutritional value.
