Organic fir honeydew harvested on the Plateau de Salt, a natural site in the heart of the Pyrenees, from silver fir forests.
We are in France, an area on the border between the Aude and the Ariége, an infinite natural space covered with fir forests and beech trees, where from the top of its It extends for 1000 metres Grand Plateau de Sault. The area is sparsely populated, there are small villages whose largest has only 400 inhabitants and the environment is uncontaminated with breathtaking landscapes. The "Route de Sapins" (the road of the firs) runs through this area, a route of 96 km immersed in forests, paths and wide valleys.
It is in these forests that Jerome Sarre takes his bees in July to harvest his precious organic fir honeydew.
An excellent honeydew honey, very dense and viscous, with a woody aroma and a hint of resin. Very different from the classic forest honeydew.
ARTISANAL ORGANIC: Jerome Sarre produces this honeydew in limited quantities because it is difficult to produce. It is harvested exclusively from his breed of Iberian honeybee (black bee).
It is the finest honey produced in this area and one of the most sought after, along with rhododendron honey.
Characteristics :
Aroma: damp wood, resin.
Flavour: soft, round and generous without being too strong. It has a malty taste reminiscent of condensed milk. A note of candied fruit remains in the aftertaste.
Physical state : very dense and viscous, the colour of silver fir honeydew is lighter than that of traditional forest honeydew.
