It can be enjoyed at any time of day, ideal in the morning to start the day; due to its moderate caffeine content, its consumption in the evening is not recommended.
How to prepare it: the golden rule
There is only one fundamental rule: never use boiling water. Excessive heat burns the delicate leaves, destroys the aromas, and produces bitterness. Taking the kettle off 2–3 minutes before boiling is sufficient.
- Temperature: 70–75 °C
- Quantity: about 2.5 g (1 teaspoon) per 200 ml of water
- Brewing time: 2–3 minutes
- Infusions: up to 2 with the same leaves
- Water: preferably natural mineral water
- Pairing: plain or with a pinch of organic honey; avoid sugar and sweeteners
