Organic ivy honey from the mountain areas of Sardinia. Collected from spontaneous blooms.

A very rare and difficult autumn production honey to produce as it requires a lot of work and passion. Ancient extraction techniques must be used as the ivy honey must be collected directly from the honeycomb because it crystallizes almost immediately and in order to be able to extract it, the honeycomb must be manually separated from the honey, just as happened in the past.

The super frames partially filled with this honey are taken every 3-4 days , extracted honey very quickly and subjected to dehumidification before its very rapid crystallization begins.

A very rare honey that we really recommend you try.

Organoleptic characteristics

Consistency : crystallizes quickly in a fine and compact way.

Color : from ivory to light hazelnut

Smell : vegetal, marzipan fragrances.

Taste : its sweetness is mitigated by herbaceous flavors and a dry aftertaste reminiscent of fresh resin.

excellent and unusual, it looks more like propolis than honey, also due to its consistency. Sublime taste, I ordered another 10 jars, too bad they are only 250gr cuts, however I don't want to be without it, it is a honey to sip, to be used not as a sweetener but in small doses in moments of mental and physical fatigue.
