The almonds come from native varieties such as the prestigious Filippo Cea 'Toritto' and Genco, renowned for their unique flavour and nutritional properties.
Filippo Cea almond: originating from Toritto and typical of the Alta Murgia National Park, it has a sweet, intense but balanced flavour with a delicate buttery finish. It has a round shape, white flesh and a creamy texture. It is high in polyunsaturated fatty acids and low in acidity.
Genco almond: a variety typical of Puglia, with a more elongated and regular shape. In terms of flavour, the Genco almond is more delicate and slightly less sweet than the Filippo Cea, with subtle notes of freshness and a slightly bitter aftertaste. It has a good crunchy texture.

The almonds are hand-picked according to local tradition. After harvesting, they undergo a delicate "smallatura" phase and are then spread out on nets to dry slowly in the sun, without the use of heat treatments or preservatives, thus preserving all their organoleptic and nutritional characteristics.

PACKAGING
Immediately after shelling, our almonds are packaged in a controlled atmosphere, without any intermediate storage that would affect their crunchiness and increase the risk of contamination with aflatoxins, so common in industrial products.
