Presidio Slow Food Rhododendron Honey: A High Mountain Honey*
This Rhododendron honey is harvested in the Alta Valsesia region (Piedmont), at an altitude of between 1200 and 1400 meters. To produce this honey, the bees may even reach heights of 2000 meters.
Beekeeper Luca Bonizzoni places his hives in areas where there is no longer any agriculture, but only sun, water, and clean air (Alta Valsesia is known as "the greenest valley in Italy"). This makes it a very difficult honey to produce.
The flavor of this honey is sweet, delicate, and floral. If the bees collect nectar from raspberry blossoms in addition to rhododendron, the flavor becomes slightly more fruity.
This rhododendron honey is raw and produced according to organic beekeeping methods. It is unpasteurized, extracted by cold centrifugation, and has not undergone any heat treatment.
The color of the new production is light amber, it tends to crystallize with fine crystals, and when crystallized the color becomes lighter.

Instructions
It goes well with traditional mountain dishes: excellent with polenta and milk or with sweet gorgonzola. But it also has its say in more unscrupulous combinations: for example with ham and figs.
Storage : store in a cool, dry place, away from heat sources.
Notes : honey can be taken by children from the age of 1 year.
