Hailing from the pristine high valleys of Corsica, this exquisite summer honey ranks among France's finest. Our beekeeper, Patrick, meticulously transports his native Corsican bees to the majestic peaks surrounding Monte Cinto, Corsica's highest mountain at a staggering 2,706 meters.
Harvested during the peak summer months (July and August) in a wild, untouched mountain setting within the vast Parc Naturel Régional de Corse, far from any agricultural or urban activity, this honey boasts a remarkable floral diversity. The Corsican maquis, a unique ecosystem of aromatic shrubs, provides a feast for the bees, with key floral contributors including Corsican wild thyme (erba barona), catnip (camedrio), kidneyvetch (montana vulneraria), wild blackberry, and helichrysum.
This prized honey displays a light amber hue and a captivating bouquet of floral, fruity, and aromatic notes. Recognized with the prestigious Miel de Corse AOP (Appellation d'Origine Protégée), which is equivalent to Italy's PDO designation, this honey reflects a commitment to local heritage. Only the native Corsican bee is used in its production, carefully preserved by stringent local regulations.
Beyond its AOP certification, this artisanal honey is produced following organic beekeeping practices, ensuring it's free from chemical treatments. Additionally, the absence of heat treatments preserves its exceptional nutritional value.
