Most commercially available saffron is cultivated using a multi-annual technique, rotating bulbs every four to seven years. While this method reduces labor and production costs, it also compromises saffron quality. Additionally, it often necessitates the use of pesticides and fertilizers.

In contrast, we employ an annual cultivation approach, carefully selecting the most suitable land each year and meticulously adhering to organic farming practices. This dedication ensures a saffron of exceptional quality and purity.

Cultivation and Processing: A Passion for Excellence

Our saffron pistils are the culmination of meticulous care and attention to detail throughout the cultivation and processing stages:

  • Organic Soil Fertilization: This eliminates the use of synthetic fertilizers, hormones, and other substances commonly used in conventional agriculture.
  • Handpicked Flowers: Saffron flowers are harvested by hand at dawn, while still closed, to preserve their precious active ingredients: crocin, picrocrocin, and safranale.
  • Delicate Destigmatization: The stigmas, the saffron's prized threads, are separated from the petals exclusively by hand. Great care is taken to avoid damaging the stigmas, ensuring they remain intact in threes, just as they naturally occur in the flower.
  • Controlled Drying: Our saffron is gently dried at a controlled temperature of no more than 45°C on the same day of harvest. This delicate drying method preserves the saffron's unique aroma and natural flavor.

This saffron pistils will enhance your recipes in a unique way, starting from the classic "Saffron risotto".

How to use saffron pistils in cooking :

  • Place a little hot water and your stigmas in a coffee cup. You can also use broth or milk. It is important to keep the water temperature constant, therefore it is ideal to keep the cup in a bain-marie.
  • Cover and leave to infuse for 40/60 minutes, you will see the water color intense yellow.
  • Pour everything into your recipe, usually at the end of cooking.
The Honeyland Tips :
  • Treat saffron as you would matcha tea , prepare an infusion in water between 70° and 75°C:
  • Saffron risotto: the secret is to add the whole saffron at the beginning of cooking, giving it enough time to open up and create an infusion with the cooking liquid.
Dosage : on average 0.10 g for the preparation of recipes for 3/4 people .
